Don’t stir too much or the chicken will fall apart into shreds. Preheat the oven to 450°F. Flip the bird over and spread it out. In a large skillet, heat about 1/8 inch of olive oil over medium-high. Spray a wire rack with cooking spray and set over a large baking sheet. The patty melts are made with the cut sides facing. Rest chicken. For the patties, heat 3 to 4 inches of oil to 350°F in a medium deep pot. Place a medium size skillet over medium heat with two turns of the pan of EVOO, about 2 tablespoons. In a large bowl, mix the pork, ginger, green onions, soy sauce and sriracha (if using) by hand. 1 tablespoon Cajun seasoning or more, if needed. Work with raw poultry on a clean cutting board. Add a drizzle of oil to the skillet, add meat, season with salt and pepper, and press. Add tomato paste, oregano and chili flakes to the onions and garlic, stir to combine, then add wine and stir another minute. Salt and pepper. To a large blender, add stock, half 'n' half or milk, Neufchatel, 1 cup Gruyere, ½ cup Parm, mustard, nutmeg, cayenne and 2 good pinches of salt. Add onions and cook a few minutes more. Heat 2 tablespoons olive oil or a thin layer in a large skillet over medium-high heat, add burgers and cook 6-8 minutes, turning occasionally, for barely pink centers. Turn oven to 500°F, with rack at center. Arrange chicken on a parchment-lined baking sheet and season with salt and pepper.
